When creating document in Microsoft Word, use the styles (the menu is in the "Home" tab) to add headings to the sections and subsections you use to organize your document.

The styles and text formatting controls are located on the "Home" tab of Microsoft Office applications.

Figure 1. The styles and text formatting tools are on the home tab.

Right-clicking (or control clicking) an image in Microsoft Office files bring the context menu which has a link to "Edit alt text."

In a recent change, Microsoft adds auto-generated alt text to images that are added to Microsoft files. While that alt text will allow the file to "pass" an accessibility check, it is usually not sufficient to meet the intent of alt text. (The text "a screenshot of a phone" is applied to a wide range of images!) For this reasons, faculty should compose their own alt text.
