Use these steps for creating an image in Google Docs and adding alternative text to it.

  1. Add the image using the insert menu.
  2. Right click the image and choose "Alt text" in the context menu
  3. Enter the alt text in the pane on the right.

To add the image to a signature in your email, copy the image then open the signatue in Gmail settings, click where you want the image, and paste.
